Japanese Slipper Cupcakes


This month's Baking with Spirit Challenge over at Cake of the Week is Midori.  Well, um...Let me see.  Midori.  Never tried it and not in the BIWB liquor cabinet.  What to do?

First, immediately go to BevMo, get a bottle and taste it.  Check.

Second, search the Midori web site for cocktail and recipe ideas.  Check.

Third, pick a cocktail that seems fun and feminine.  Japanese Slipper.  Check.  {Please note: Midori has no baking recipes.  That had me a bit scared.}

Fourth, search the internet for baking recipes using the Japanese Slipper as inspiration.  Check.

So, believe it or not, there is only ONE recipe on the web that I could find for a Japanese Slipper Cupcake.  The Lone Baker.  Nice name, killer photo.

Once I had the idea and a good graphic, I set to work creating a solid recipe that I thought would bring out the 3 flavors of this cocktail: Midori, orange (Triple Sec) and lemon.  I knew that baking with Midori might be tough, so I decided to just use it in the frosting.  That left the cupcake to be the showcase for the orange and lemon flavors, with the addition of Triple Sec of course.  

Found my cupcake recipe "base" on Paula Deen's website.  I know...Think what you like.  But, you have to admit, she does have some very good recipes.  I needed something to bring out the citrus flavors and hold up with the Triple Sec.  Check.

Scored on her recipe for an orange creamsicle cupcake that infuses the citrus zest into the sugar.  Great technique and something I will bring to all my citrus baked goods.  

And, I will tell you, this Midori Seven Minute Frosting has changed my life.  

I had no idea this frosting was so easy and so delicious.  We never had this when I was a kid because we didn't have a stand mixer and there was no way my mom was going to stand with a hand mixer for 7 minutes.  Lower in fat, too, than buttercream frosting.  A good thing!

Thank god for my Kitchen Aid mixer, Bella!  And, now I also have no fear of my future with Swiss Meringue Buttercream.  



These are a shocking light green color and I love the pop of orange in the liners and sprinkles on top.  Super moist and so full of citrus flavors.  A very nice cupcake version of the Japanese Slipper Cocktail.  Super festive, too!!

Whiskey Fig Cupcakes


Truly inspired by a fab artisan cocktail creation by Jason Poole at the Pour House in Sacramento.  If you've been reading BIWB for a while, you may remember our first trip to Pour House.  That's when we sampled for the very first time, Tullamore D.E.W. with Tim Herlihy the brand's ambassador.  

We were so impressed with the offerings that we returned a few months later for Girls' Night.  Our second visit included sampling the bar and dinner menus as well as a few more classic cocktail creations.  Jason describes their approach as "quick craft" where top quality ingredients are used to create unique and fully flavored cocktails. 

My first cocktail of choice: the Whiskey Fig.  Duh.  One sip: I was "in".

Next I tried a drink with ginger and whiskey...Sold yet again.  I would have sampled more, but it was a school night.  Wait, no, I had work the next day...That's right...Work.  

I knew that once I had the time I would be creating a BIWB treat to showcase Jason's creation of whiskey and fig preserves.  Lucky for me, I had a good amount of Tullamore on hand as well as some fig preserves from my coworker.  Score!

These cupcakes are moist.  No, really, they are moist.  They have a great spiced fig flavor with warm caramel from the Tullamore.  On top, a nice sweet finish with the honey whiskey fig buttercream.  And, as the true baker that I've become, I marveled at the rise of these lovelies.  Please check out the pics showing how much these babies topped the pan...Truly a thing to behold.

They say that whiskey is enjoyed by more and more women today.  I can attest to that as a fact...I'm not just baking with this stuff.  No ma'am.  I'm also enjoying a cocktail (or two)!

Manhattan Cupcakes {with Tullamore D.E.W.}



Rich and moist, these Tullamore D.E.W. whiskey-infused cupcakes are topped with buttercream that tastes just like a Manhattan cocktail...A great after dinner treat on these cold, late winter nights.  Whether or not you're a lover of the cocktail, I can guarantee you will love these very "grown up" cupcakes!

The Manhattan cocktail was first introduced in (where else?) Manhattan.  Legend has the cocktail created around 1870, so it really is one of the very first cocktails, and a true American tradition.  It was a cocktail that used the whiskey of its time, Rye (Canadian Whiskey), which is a blended whiskey with a large portion of corn spirits.  

The "classic" Manhattan cocktail is a simple 2:1 ratio of whiskey to Italian vermouth, with a few dashes of Angostura bitters.  These cupcakes are based on that classic ratio of whiskey to vermouth.  Bitters were added as well.   Why fiddle with a good thing...Right?  

I used Tullamore D.E.W. in my cupcakes because it has become my whiskey of choice in all thing baked or "cocktailed."   You will find Tullamore D.E.W. smooth and full of flavor -- a great addition to boozy baked things, with a finish of warm caramel.  I'm not much of a straight up kind of cocktail girl, but I'm learning to enjoy a Manhattan every now and then.  An easy cocktail to order, and very grown up, too! 

Give these cupcakes a try...They are an easy slide into the classic Manhattan cocktail.  And, you just might have found a new and uniquely American cocktail to enjoy at your next happy hour!

I'm baking in honor of my friend and all my friends' mothers who have fought their own personal battles with breast cancer and other forms of cancer.  And, especially, I am dedicating this baking post to one woman who holds a very special place in my heart, Mrs. Evelyn Finch. 

Mrs. Finch came into my life when I was a very young teenager and she is the mother of two very dear friends from my teenage and college years, Carol and Betsy.  I knew almost from the first meeting that Mrs. Finch welcomed me as another daughter, and the years and years of caring and support by both Mr. and Mrs. Finch have always made me feel safe and loved.  And, even when I wasn't able to see them often.  It can be an uneasy world sometimes, but knowing that they always loved me even when they didn't have to love me has made me a much better person in this life.  Without them, I have no idea how I would have survived some very difficult years.  They were always there, always welcoming, fully supporting me, and never judging me.

So, on to Mrs. Finch's story.   She's battled two bouts of breast cancer with lumpectomies on both breasts and also was diagnosed with kidney cancer.  She's am amazing survivor on many levels.  Always kind-hearted and generous.  A bit of a temper when pushed too hard, but that's the fighter in her.  I'm amazed when she describes her diagnoses and treatments...Almost like they are just something in life you "make do" with and move beyond.  She's had some other health challenges in her life, and seems pretty pragmatic.  I'm a wimp when it comes to medical issues, so she's teaching me to stay steady and work hard to get better. 

I recently visited the Finches whom had moved to Ohio last year.  I hadn't seen them for too long, entirely my fault.  And, what an amazing visit and time with them.!!  I cooked for them and did a few errands, but it was so great to just see them and be in their presence.  Grounding and solid. 

She's often asked me to call her, Evelyn, but I just can't.  She'll always Mrs. Finch to me and I will always love her for keeping me a part of her family.

So, I've made Pink Champagne Cupcakes with Strawberry Buttercream, adapted from a recipe in Intoxicated Cupcakes.  I have shared with Mrs. Finch and her family many a champagne cake created by Nugget Market in Davis, California.  I'm sharing my baked goodies with a local breast cancer group, Bosom Buddies, and they have asked that I speak about Frosting for the Cause.  My other donation will be to the Placer Breast Cancer Endowment which funds cancer research at the U.C. Davis Medical Center.

Blueberry and Cream Cupakes (with Gin!) and Our ~First~ Giveaway!!



So, have you ever watched Hoarders?  I know, not something you'd expect me to talk about on this blog.  But, I ~more often than I'd like to admit~ find myself glued to the TV watching these very, very sad people trapped by all their STUFF.  I have stuff, do you? 

Good thing for me, though, is that Hoarders makes me feel okay with my stuff.  I do need to purge this fall and make some changes to my life plans with all my stuff.  For example: Do I need 10 plastic lawn chairs and 2 tables for the next back yard bbq bash?  Probably not.  I think my large party days are over and to "draw" a crowd like that probably isn't in the cards.  Maybe next big bash will be a "Bring Your Own Chair" party...I don't know.

And, I will admit: there is a method to all this purging madness.  The simple truth is I need MORE room for all my BAKING STUFF!  Baking stuff before party furniture?  I think yes!

I made these cupcakes using a few recipes.  The most special part is the blueberry compote that I learned to make from my friend, Susan, over at My Mother's Apron Strings.  Susan is amazing...I just wished I was as generous as her.  She's so creative and a great baker.  Someday we're gonna meet up and enjoy some tea and treats...I have hope.  :)

Red Hot Velvet Ice Cream Cupcakes {with Goldschlager}


Today, I'm entering the 2012 Ice Cream Cupcake Contest sponsored by two amazing blogs: Cupcake Project and Scoopalicious.   There is some very stiff competition this year, but I'm excited to try my hand at this type of cupcake...Always keeping in typical BIWB fashion, of course.  So, you know there's gonna be some booze in these my friends...

And, let us not forget to mention that my excitement is almost uncontrollable because I get to bake red velvet cupcakes with red hots and Goldschlager!!!!  I mean, really, how bad can that be for this girl?

These cupcakes are based on the traditional Southern cake: Red Velvet.  It's an interesting recipe, which is described as a vanilla cake with a hint of cocoa and a bright red color.  There's a bit of a KICK to these racey red lovelies with the addition of Goldshlager, a cinnamon schnapps. 

I've made this cake a few times and have tried a few different approaches.  I find that using all oil for the cupcake version really does give the cupcake more body and great texture.  For a cake, though, I think I will always stick with the 1/2 butter and 1/2 oil approach.  Just seems to hold up to frosting and give a great crumb.

I didn't use all the red food coloring that some recipes call for as I find too much gives a funky food colory flavor, while too little just makes the cupcake look kinda flat. 

And, who wants a flat cupcake? 

These are super easy to make and assemble.  Really.  Trust me.  I wouldn't have even attempted this otherwise.  

For the cinnamon L-U-V-E-R in all of us!  Gorge, yes?  And, the taste is BEEEYOND delish!!  Just sayin'.  :)

Ginger Rogers Cupcakes



Today is Ginger Rogers' birthday and she would have been 101 years old today.  This cupcake honors her and her amazing talents.  The ingredients and inspiration come from the cocktail named after her.  The Ginger Rogers Cocktail is the most popular cocktail at the super trendy and super retro bar, The Absinthe Brasserie and Bar in San Francisco.  These guys really celebrate the era of great and creative cocktail culture and have a very cool bar companion book (that I MUST have), The Art of the Bar

I grew up watching Ginger Rogers and Fred Astaire movies...Who in my generation didn't?  My sister and I watched them whenever they came on the T.V.  No DVR in those days, so watching a movie lots and lots of times kinda took the place of re-wind today.  Here is a clip from one of those movies, Swing Time.  They say this is the best dance scene these two great dancers ever filmed...You're about to see why.
Isn't that amazing.  I so dreamed as a little girl that I would dance like this one day.  Alas, no couples dancing ever came for me, but that doesn't mean I don't chair dance when I can.  Ya know, the kind you do in the car?  And, let's not forget dancing while your baking!  ;-D  Or, even while cleaning house. 

And, don't get me wrong: I am not adverse to learning swing dancing and the Texas two-step some day!

I know that you'll enjoy this cupcake...It's super moist with a great texture and full of exotic flavors: ginger, mint, lime and gin!  Kinda like being in Rio, huh, with Ginger and Fred.

Cosmopolitan Cupcakes


I threw a girls' night cocktail and dinner party for my mixer, Bella, which was custom painted by Nick Dinardo of Un Amore Custom Designs.  I also made these very special cupcakes for the party...Everyone loved them, moist, vodka-soaked cranberries surrounded by rich lime flavored cake and topped with Cosmopolitan frosting.  What more can I say?  

Bella's party companions were: Melanie, Jacqueline (my BIWB partner extraordinaire), Dorothy (Iron Blogger), Peggy, Nancy, Holly, and Hayley (Blogger Phenom).  All great friends who listened very patiently over the long, long months waiting for Bella to return.  After several delays, including a trip to Michigan to get fixed, she arrived a few weeks ago.  I couldn't be more happy with Nick's design and finished art work.  I am truly luck to have Bella in my home.

And, a very, very special thanks to Peggy for allowing me to borrow her "extra" KitchenAid while Bella was away.  I couldn't have baked a thing or blogged these last few months.  Most especially, there would have been NO Xmas cookies for my 30 friends and family.  I could not thank Peggy enough...Really.  If you bake and you have a KitchenAid, you know I mean.  :)


So you see what Bella is holding?  Take a close look...It's a cosmopolitan!  As the artist, Nick, was putting the finishing touches on Bella, we had to decide what she would be holding.  Rose, wooden spoon, glass of wine?  Wait, wait!  I am known among my friends for making a killer cosmo.  It was only fitting that Bella should be enjoying one for eternity, too.  And, see that bling...Swarovski crystals baby!  Nick's very special gift just for Bella!!

More on Bella later as I'm developing her signature cupcake...Just be patient cuz' you're going to LOVE it!

Today, I'm posting at Frosting for the Cause, an amazing year-long collaboration of bakers who share their baked goods and stories of those touched by breast cancer.  As today's guest baker, I made Pink Champagne Cupcakes with Strawberry Buttercream and shared a story about Mrs. Evelyn Finch, a very, very special woman in my life.  Please join me over at Frosting for the Cause today!

Frosting for the Cause

The website was created by Paula Kelly-Bourque as an act of love.  Plain and simple.  Her devotion is a true inspiration to me...Here is what it's all about (paraphrased from Paula):

Beginning January 1, 2011, a total of 365 bakers from across Canada and the United States will take turns doing a guest post. Once a day, every day for a year, a new and talented baker will showcase their home-made, hand-decorated cookies, cupcakes and sweets or all kinds and will include their recipes. The guest bakers can also share a personal story about a woman in their life who has had to face this terrible disease head-on.

By signing onto this project each guest baker also commits to donating a batch of their baked goodies to a local Women’s Hospice, local hospital or similar cancer support group.  We also commit to making a personal $25.00 donation to the Canadian or American Cancer Society, or other cancer research organization, to be directed to research projects that are working diligently to find cures specifically for cancers that affect only women.  We, the 365 guest bakers on Frosting for the Cause, will not only raise awareness of all of the cancers that currently affect women, but we will raise a total of $9,125 for research into these diseases.

Piña Colada Cupcakes

Okay, so let's get this right out there: 
(1) IMO, these are the BEST cupcakes I've made so far in this project.  I can say that...
(2) I do not like the Piña Colada cocktail variety of this food.  Even a 2nd sip didn't do the trick.
(3) A co-worker, who shall remain nameless, stated, "I ate the whole thing and didn't share...Is that rude?  I don't even care."  And...

I made these last weekend in a cupcake-baking-frenzy, for what reason I have no idea.  I haven't posted in a while and really wanted to try something cocktail in theme.  Found this recipe via The Cupcake Project, a site that by description pretty much tells the story.  Currently, Stef is in search of the best vanilla cupcake recipe.  I have high hopes for her as she's provided me with great recipes and lots of great ideas.  This time I'm going to post my version of her Piña Colada Cupcake recipe.  I made some modifications which I think added a lot of moisture and yummo-factor.  At BIWB, we're always researching baking techniques and ingredients of master bakers.  When we "crack" a secret baking code, we feel pretty damn cocky.  Of course, being girls, our cocky attitudes are always exercised with great social decorum.

I found this recipe via a friend of a friend of a friend's blog. I honestly don't even know this woman, nor could I find her blog again! That's what it's like to "mine" blog sites. So, I'm providing a few recipes. I used the first one from FoodNetwork:

This recipe is from Cupcakes Wars, and if you haven't watch an episode, I highly recommend it. They come up with some interesting combinations, and it's a very competitive business this baking of cupcakes. ;-)
