Japanese Slipper Cupcakes
This month's Baking with Spirit Challenge over at Cake of the Week is Midori. Well, um...Let me see. Midori. Never tried it and not in the BIWB liquor cabinet. What to do?
First, immediately go to BevMo, get a bottle and taste it. Check.
Second, search the Midori web site for cocktail and recipe ideas. Check.
Third, pick a cocktail that seems fun and feminine. Japanese Slipper. Check. {Please note: Midori has no baking recipes. That had me a bit scared.}
Fourth, search the internet for baking recipes using the Japanese Slipper as inspiration. Check.
So, believe it or not, there is only ONE recipe on the web that I could find for a Japanese Slipper Cupcake. The Lone Baker. Nice name, killer photo.
Once I had the idea and a good graphic, I set to work creating a solid recipe that I thought would bring out the 3 flavors of this cocktail: Midori, orange (Triple Sec) and lemon. I knew that baking with Midori might be tough, so I decided to just use it in the frosting. That left the cupcake to be the showcase for the orange and lemon flavors, with the addition of Triple Sec of course.
Found my cupcake recipe "base" on Paula Deen's website. I know...Think what you like. But, you have to admit, she does have some very good recipes. I needed something to bring out the citrus flavors and hold up with the Triple Sec. Check.
Scored on her recipe for an orange creamsicle cupcake that infuses the citrus zest into the sugar. Great technique and something I will bring to all my citrus baked goods.
And, I will tell you, this Midori Seven Minute Frosting has changed my life.
I had no idea this frosting was so easy and so delicious. We never had this when I was a kid because we didn't have a stand mixer and there was no way my mom was going to stand with a hand mixer for 7 minutes. Lower in fat, too, than buttercream frosting. A good thing!
Thank god for my Kitchen Aid mixer, Bella! And, now I also have no fear of my future with Swiss Meringue Buttercream.
These are a shocking light green color and I love the pop of orange in the liners and sprinkles on top. Super moist and so full of citrus flavors. A very nice cupcake version of the Japanese Slipper Cocktail. Super festive, too!!

Rummy Hummingbird Cake
Today, I made a birthday cake for all the September Babies in my life! My version of an old Southern favorite the Hummingbird Cake. If you've never had this cake, you really should try it. It's easy to make, real comfort food and super delish. This cake really holds up to frosting and the cake is moist (bananas and pineapple) and full of flavor (cinnamon and rum).
I think of this cake as:
(Carrot cake - carrots) + bananas = YUM!
Best parts, though, IMO are the rum and that it has THREE layers! I also added rum to the cream cheese frosting to give it just that right amount of mellow rum kick. :)

This recipe is adapted from a cookbook by Art Smith, who was Oprah's chef...As we all know, I'm not a fan of Oprah (that would take a few blogs to explain...), but hey, regardless this-guy-can-cook!

Shamrock Sugar Cookies with Whiskey and Baileys Frosting
Moist and soft, green-tinted, whiskey-infused sugar cookies with smooth Baileys frosting...Wearing o' the green never looked so good!
These are my favorite sugar cookies and are mildly adapted from my favorite cookie book, Cookie Mania. It is out of print, but if you're lucky, you can find a gently-used copy on the Internet. It is my secret recipe book for the majority of my Xmas cookies. Shh, don't tell anyone.
I don't make sugar cookies often, well, almost never really. This recipe is very forgiving and makes a very moist cookie that holds up to frosting. They are very plain on their own, so I highly recommend at least sugar on top. I tried to tint them green, but alas I goofed. No problem, I adapted. They still turned out yummy and soft.
The addition of Jameson Whiskey really helped crisp them up and I think it was necessary as they can tend to get really soft once frosted. Not this time! Soft, yet still a nice chewiness. The Baileys frosting was a BIG hit at the office. Each time I opened the Tupperware container to share, the waft of Baileys helped the day go by so much better. :)
Easy recipe, cuz I don't make cut out cookies unless they are EASY!

Carrot Rum Cupcakes with Coconut Rum Cream Cheese Frosting
I've wanted to make a booze-infused goodie using one of the cake mixes I have squirreled away in my cupboard. I generally don't get a chance to use mixes much anymore, but I'm a fan of their great flavor, ease of use, consistent results, texture, and adaptability. They are the foundation of my Kahlua Cake and Jacqueline's Chocolate Orange Cupcakes. So, here is my first attempt to take a basic box cake mix and add some booze. EASY! I think the result is one of my favorites. And, this frosting is a coconut lover's dream!

BIWB goes Gluten-Free: Rum-Infused Apple and Quinoa Cupcakes with Vanilla Bean and Cinnamon Cream Cheese Frosting
Whoa! That's probably the longest title yet! So, I wanted to show our appreciation for one of our guest photographers, Erika. She was able to capture one of Mrs. Murphy's booze-infused creations when a camera wasn't available. I ran into Erika in the elevator and discovered that she was gluten-free. An interesting concept: could I find a booze-infused gluten-free recipe? I found this recipe on The Cupcake Project. It called for rum, NO PROBLEM!

Quinoa? I didn't even know the correct pronunciation, let alone where to find it in the grocery store or what it even looked like. Found it in the wonderful bin section of our neighborhood Winco...LOVE Winco...LOVE the bin section...Anyway, it was pricey for a little-bitty grain. I was up for this challenge!
